Producers are very creative in the making of by-products from Chasselas : Juice, Quercy des Îles (a mixture of Rum and Chasselas juice), Emoustilleur (a mixture of Chasselas Juice and spirit), jam, sapa…(the juice which has not reached maturity is used in sauces…). 

Restaurateurs ...

This delicious fruit contributes to enhance traditionnal cuisine with foie gras, oysters, rabbit… and for dessert Chasselas roll cake, sorbet…)

Bakers ...

Gille Quèbre totally inspired by the Chasselas grape created its famous Chasselas macaron which has met with great success : so fine and delicious. But its creativity abounds and we are now presented with a mouthwatering chocolate, a mix of Chasselas and rum.

Cédric Moretto, confectioner of great talent, created the Grain Doré, Chasselas grape coated in a delicious dark chocolate...
